A classic summer recipe: Tuna Bagel Sandwich Special
2 XL bagels Everything, sliced
650g quality tinned tuna (in water), drained
approx. 60g mayonnaise
few chopped cornichons
2 tbsp chopped fresh dill
1 tbsp chopped fresh tarragon
2 tbsp chopped parsley
2 tbsp capers
1 lemon, juiced
salt and freshly ground black pepper
approx. 80-100 ml olive oil, extra virgin
60g cream cheese
for the topping:
half red onion, thinly sliced crescents
1 cucumber, sliced
1 tomato, sliced
4 leaves of lettuce
Preparation:
Start with the tuna salad: Mix all ingredients in a bowl and stir. Taste / adjust with salt and pepper.
Toast the cut bagel slices and smear the botton with cream cheese. Top with the tuna salad and then layer onions, tomato, cucumber and lettuce. Add the top the bagel and serve.
